Creamy Chicken and Mushroom Pasta Recipe

Ingredients:

✶1 pound farfalle (bow-tie) pasta

✶3 tablespoons extra virgin olive oil

✶2 pounds chicken tenders, patted dry

✶salt and ground black pepper to taste

✶24 ounces fresh mushrooms, sliced

✶1 medium onion, halved and thinly sliced

✶3 tablespoons fresh minced garlic

✶3 cups chicken broth

✶4 teaspoons Dijon mustard

✶¼ cup heavy cream

✶2 cups roughly chopped fresh spinach

✶2 tablespoons coarsely grated Parmesan cheese, or to taste

✶1 teaspoon chopped flat-leaf (Italian) parsley, or to taste (Optional)





DIRECTIONS:

Step 1


Heavily salted water in a large saucepan should be brought to a boil. Boil the bow-tie pasta, stirring now and then, for about 12 minutes, or until it's firm to the bite but still tender. After draining, move the contents to a deep dish or serving basin.


Step 2

In the meantime, warm up the olive oil in a big skillet for one to two minutes on medium-high heat. Put the tenders in hot oil and cook for three to four minutes, or until they are gently browned on one side. Season with salt and pepper. After 3 to 4 minutes, turn and cook the other side till light brown. Place the chicken onto a platter.






Step 3

Add the onion and mushrooms to the heated skillet. Cook and stir for 4 to 5 minutes, or until the onion is gently browned. Add the garlic, stir, and simmer for one minute. Add mustard and chicken broth and stir. Add salt and pepper to taste and simmer for five minutes. Place the chicken tenders back in the skillet and cover with the broth mixture. Cook for about 5 minutes, or until the chicken is no longer pink in the middle and the juices flow clear. When placed in the center, an instant-read thermometer should read at least 165 degrees Fahrenheit (74 degrees Celsius). After removing the chicken, lay it over the cooked spaghetti.





Step 4

Simmer the sauce for a further three minutes or until it begins to thicken. Cut off the heat and mix in the cream. Stir in spinach and cook for 1 minute or until it wilts. Cover the noodles and chicken with sauce. Add some Parmesan cheese on top and some parsley as a garnish.
