Use baking chocolate that hasn't been sweetened (not the sugar-free sweetened variety) along with cocoa powder. Because they accomplish different tasks, we use both. Baker's chocolate has a moist, fudgy texture that cocoa powder lacks. However, cocoa powder has a much stronger chocolate flavor and is essential in excellent brownies.

Since coconut flour absorbs too much moisture, it cannot be used as a substitute; however, you can use it to make these coconut flour brownies.


Besti Powdered Monk Fruit Allulose Blend - This sweetener measures 1:1 like sugar and keeps your low carb brownies smooth, not gritty, with no aftertaste. I've made these before using erythritol (in fact, it's what my first cookbook called for since Besti hadn't yet been invented), but the texture wasn't as smooth, the end product was more dry, and occasionally they crystallized when they were stored.

 
Eggs: For the best keto brownie recipe, use eggs that are room temperature. The butter will solidify if they are cold, and the batter won't be smooth. I have not tried it with any egg substitutes to see if any would work; however, if you do, please let me know.


Vanilla Extract: For the best flavor, use high-quality vanilla extract.


Sea Salt - Leave out the extra salt if you're using salted butter.


Frosting – The only thing these brownies made with almond flour are missing is a crackly top, but I came up with a simple


fix: drizzle sugar-free chocolate frosting on top! It's the ideal cap to this recipe for keto brownies.

Step 1

Set the oven's temperature to 350 F (177 C). Using parchment paper, line an 88 in (2020 cm) baking pan, extending the paper's edges over the sides.


Step 2

In a double boiler, combine the butter and chocolate and melt them together until smooth.

Get rid of the heat. Add the vanilla extract and stir.

I conducted a ton of research and testing to develop the best keto brownie recipe, and I want to share what I learned with you. Follow these guidelines to ensure that your brownies made with almond flour are incredibly fudgy:

• Pick the appropriate sweetener: If you want your keto brownies to be fudgy and not dry, an allulose-based sweetener like Powdered Besti is especially important. I don't usually emphasize this, but I did mention it above.

• Not too much batter mixing: Just enough batter must be combined to ensure uniformity. A batter that has been over-mixed may contain too much air. On the other hand, insufficient mixing will result in an uneven outcome.

• Don't drain the extra butter: The brownies may have some butter pooling on top when they are finished baking. This can happen or not, but if it does, don't pour it off because doing so would dry out the brownies. If they cool, it will reabsorb.

• Don't overbake: If you wait until a toothpick emerges    clean, the brownies will be dry. When a toothpick is inserted    into a batch of low-carb brownies, it almost comes out clean but not quite. You can ball up the remaining batter between your fingers if there is any.


Allow them to cool: No matter how tempting, resist the urge to move, cut, or consume the brownies right away. To set, they must completely cool. Allow them to cool and set overnight if you can.

Cut down directly: To make straight cuts, use a chef's knife that is sharp.
