Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn kernels, drained
  • 1 (10 ounce) can Rotel tomatoes and green chilies, undrained
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • Shredded cheddar cheese, sour cream, and tortilla chips for serving (optional)




Instructions:

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken and cook until browned on all sides.


Step 2

Add the onion, garlic, jalapeño (if using), bell peppers, diced tomatoes, black beans, corn, Rotel tomatoes and green chilies, chili powder, cumin, salt, and black pepper to the pot. Stir to combine.


Step 3

Bring the chili to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the chicken is cooked through and the chili has thickened.


Step 4

Stir in the cilantro and serve immediately.
